Instead of doing my usual Pinterest Picks post today I thought I'd share a few of my favorite Instagram photos from the month so far. Instagram is by far my favorite social media venue. I love thinking about what I'm going to share everyday. I like to share a little more about my life than you see on the blog but still with a heavy focus on DIY. You'll see sneak peeks of works in progress like the weaving or outtakes from the blog. Sometimes, it's a quick snapshot of a meal and other times it's way more involved like the little Whale Softie vignette. By the way, I'm thinking about posting a (free!) pattern for the whale softie. Is that something you lovely crafty types would be interested in?
Meanwhile, to start off the weekend, I thought I'd share a super quick recipe for the pureed cauliflower. I recently got into eating cauliflower and I love it! I still don't like it raw but it's great for soups or faux mashed potatoes. Also, it's supposed to be healthier than potatoes. The key to this recipe is the plain yogurt (also healthy!). I used a greek style and it was so good!
Pureed Herb Cauliflower
1 head cauliflower, roughly cut
4 T butter
1-2 T fresh sage, chopped
1-2 T fresh thyme, chopped
4 garlic cloves, chopped
3 T plain yogurt (or sour cream)
Salt and pepper to taste
(measurements are not exact and can be adjusted for what you have on hand)
Directions: Steam cauliflower until tender. Meanwhile in small pan melt butter with fresh herbs and garlic. Put cauliflower, herb butter and yogurt in food processor and pulse until smooth. Add milk or broth to thin, if needed. Season to taste with salt and pepper. Enjoy!
